Tis the season to indulge in lentil and kale soup. A seasonal dish that will go down well amongst all members of the family, boost immune systems with this deliciously nutritious soup.

Cooking time: 25 mins
What You’ll Need:
- 150g Puy lentils
- 2 x 200g packs kale
- 1.5 litres vegetable stock
- 195g can sweetcorn, drained
- 4 sprigs thyme
- 400g can chopped tomatoes
What To Do:
- Cook the lentils in boiling water for 15 minutes, drain and return to the pan, add the kale, stock and the remaining ingredients. Simmer covered for 8 minutes then season to taste before serving.
