Winter Lentil and Kale Soup

Winter lentil & Kale Soup PostTis the season to indulge in lentil and kale soup. A seasonal dish that will go down well amongst all members of the family, boost immune systems with this deliciously nutritious soup. 

Serves 4

Cooking time: 25 mins

What You’ll Need: 

  • 150g Puy lentils
  • 2 x 200g packs kale
  • 1.5 litres vegetable stock
  • 195g can sweetcorn, drained
  • 4 sprigs thyme
  • 400g can chopped tomatoes

What To Do:

  • Cook the lentils in boiling water for 15 minutes, drain and return to the pan, add the kale, stock and the remaining ingredients. Simmer covered for 8 minutes then season to taste before serving.
