Chocolate and Cola Float

Cola FloatDelight the kids this weekend with this deliciously retro recipe for a chocolate and cola float. Inspired by the great soda parlours that used to be dotted around the USA, this cola float is ideal for serving up at a little one’s birthday party or even as a Sunday afternoon treat. We may not have soda parlours in this country, but we can all enjoy this sweet treat at home. 

Serves 4

Preparation time: 10 minutes, plus chilling

What you’ll need:

  • 250ml (8fl oz) double cream
  • 1 litre (1¾ pints) cola (preferably the old-fashioned type)
  • 2 tsp vanilla extract or paste
  • 8 scoops of dark chocolate ice cream
  • 100g (3½oz) maraschino cherries,
  • plus a few extra to decorate
  • 25g (1oz) dark chocolate, grated

What to do:

  1. Chill 4 tall sundae glasses in the refrigerator. When ready to serve, lightly whip the cream until thickened slightly but still sloppy. Put to one side.
  2. Put the cola, vanilla, ice cream and cherries into a large blender, in 2 batches if necessary, and use the pulse button to blend together.
  3. Pour into the chilled glasses, spoon the cream on top and sprinkle over the grated chocolate. Decorate with a few maraschino cherries for a little touch of kitsch and serve immediately.

Top Tip: It is best to use the pulse button when blending the cola float, as it will fizz and froth a lot.
