Mushroom and Bacon Bolognese

Mushroom, beef and bacon bolognesePacked full of flavour this Bolognese is a great way to get little ones to eat their veggies (or stubborn grown-ups). 

Serves: 4
Cooking Time: 55 minutes (10 minutes preparation time) 

What You’ll Need: 

  • 1 tablespoon olive oil
  • 1 onion,roughly chopped
  • 2 rashers smoked streaky bacon,diced
  • 250g/9oz extra lean minced beef
  • 1 clove garlic,finely chopped
  • 500g/1lb 2oz closed cup mushrooms,sliced
  • 1 tablespoon plain flour
  • 400g/14oz can chopped tomatoes
  • 150ml/º pint beef stock
  • 1 tablespoon tomato puree
  • 1 tablespoon fresh chopped oregano or one quarter teaspoon dried
  • Salt and freshly ground black pepper
  • 300g/11oz spaghetti
  • Small bunch fresh basil,finely chopped,to garnish
  • Grated parmesan to serve

What To Do: 

  1. Heat the oil in a saucepan,add the onion and bacon and fry,stirring for 5 minutes until the bacon is just beginning to colour. Stir in the mince,garlic and mushrooms and fry,stirring for 5 minutes until the beef is evenly browned.
  2. Mix in the flour then add the tomatoes,stock,tomato puree and oregano. Season and bring to the boil,stirring. Cover and simmer gently for 35 minutes,stirring occasionally then remove the lid and cook for 10 minutes so that the sauce can thicken up slightly.
  3. Meanwhile,bring a saucepan of water to the boil,add the spaghetti,bring back to the boil and simmer,without a lid for 8-10 minutes until just cooked. Drain and stir into the Bolognese. Spoon into bowls,sprinkle with chopped basil and serve with grated parmesan.

Tip: If you would prefer to cook the Bolognese in the oven, transfer it to a casserole dish, cover and cook in a preheated oven set to 180oC/350oF/Gas mark 4 for 1 and one quarter hours.
