Try this simple lamb stew recipe for a tasty dinner.

Cooking Time: 1 hour 30 minutes
What You’ll Need:
- 350-450g New Zealand Lamb,
- cut into chunks
- 1 tbsp oil
- 12 shallots, peeled and halved,
- or 1 large onion, peeled and sliced
- x3 garlic clove, chopped
- 3 medium carrots, peeled and thickly sliced
- 400g can chopped tomatoes
- 1 lamb stock cube
- 420g can of flageolet beans, rinsed and drained
- Salt and freshly ground black pepper
- Glass of wine (red or white) – optional
What To Do:
1.Heat the oil in a large saucepan and fry the shallots or onion for 3 minutes until lightly browned. Stir in the lamb, carrots, tomatoes and stock cube.
2.Refill the tomato can with cold water and add to the pan. Bring to the boil and simmer for 20 minutes, stirring occasionally.
3.Stir in the beans and return to the simmer for a further 5 minutes until hot. Season to taste and serve with freshly cooked rice or mashed potatoes.
