Prep time: 10 minutes

Cooking time: 6-8 minutes Serves 1

What you’ll need:

  • 1 smoked mackerel fillet
  • 35g broccoli florets
  • Small handful baby spinach leaves
  • 2 radishes, sliced
  • 3 cherry tomatoes, halved
  • ½ red pepper, sliced
  • Small handful alfalfa sprouts
  • ¼ tsp mustard
  • ½ tsp white wine vinegar
  • 1 tsp vegetable oil

What to do:

  1. Heat the mackerel fillet according to pack instructions.
  2. Steam or blanch the broccoli in boiling water then refresh under cold running water.  Drain.
  3. Toss together the broccoli, spinach leaves, radishes, tomatoes, pepper and sprouts.
  4. Break up the mackerel fillet and add to the salad.
  5. Mix together the mustard, white wine vinegar and oil and use to dress the salad.
