Healthy Veggie Tagine

Healthy Veggie TagineHealthy yet hearty, this flavoursome tagine is a great way to get little ones to try new veggies. It’s also super versatile, add courgettes, aubergines, root vegetables as you wish.

Serves 4

Preparation Time: 10 mins 

Cooking Time: 20 mins 

What You’ll Need: 

  • 600g potatoes, diced (eg Maris Piper
  • 1 tbsp vegetable oil
  • 1 onion, diced into large pieces (250g)
  • 2 carrots, thickly sliced (200g)
  • 1 red pepper, thickly sliced (180g)
  • 2 tsp Tagine Paste
  • 400g tin chopped tomatoes
  • 410g tin chick peas, drained and rinsed
What To Do:
  1. Boil the potatoes for 5 minutes, then drain.
  2. Heat the oil in a large frying pan and fry the onion, carrot and potato for 5 minutes.  Add the remaining ingredients, cover and simmer for 10 minutes.
  3. Serve with a sprinkling of chopped parsley and a dollop of yogurt.

This can be frozen once thoroughly cooled.  Defrost before reheating
