Healthy yet hearty, this flavoursome tagine is a great way to get little ones to try new veggies. It’s also super versatile, add courgettes, aubergines, root vegetables as you wish.

What You’ll Need:
- 600g potatoes, diced (eg Maris Piper
- 1 tbsp vegetable oil
- 1 onion, diced into large pieces (250g)
- 2 carrots, thickly sliced (200g)
- 1 red pepper, thickly sliced (180g)
- 2 tsp Tagine Paste
- 400g tin chopped tomatoes
- 410g tin chick peas, drained and rinsed
What To Do:
- Boil the potatoes for 5 minutes, then drain.
- Heat the oil in a large frying pan and fry the onion, carrot and potato for 5 minutes. Add the remaining ingredients, cover and simmer for 10 minutes.
- Serve with a sprinkling of chopped parsley and a dollop of yogurt.
This can be frozen once thoroughly cooled. Defrost before reheating
