Indulge in Italian food this evening with this recipe for tomato and buffalo mozzarella skinny rustica pizza. Relatively low in calories and extremely appetising this skinny rustica pizza is a brilliant way to end a long day. Invite friends and serve with fresh green salad, and white wine for a true Italian experience.

What You’ll Need:
For the Dough:
- 250gr wholemeal flour
- ¾ tsp salt
- 100 ml lukewarm water
For the Pizza:
- Olive Oil
- Fresh Tomato Sauce
- Basil Leaves
- 50g Buffalo Mozzarella
- Sundried Tomatoes
What To Do:
- Mix flour and salt; mash yeast in the water and pour into the well. Incorporate flour to make a soft dough, knead well until smooth and elastic. Shape in balls of around 110gr; leave in a warm place to rise, about 2 hours (almost double size) the dough now is ready.
- When the dough is ready, stretch it with the palm of your hand until is about 5mm thick
- add about 1oz of tomato sauce, few leaves of basil, 50gr of buffalo mozzarella and some sun dried tomato.
- Bake in a hot oven until gold and crispy then serve with a green salad.
