Spinach and Feta Frittata

Spinach & Feta

Try this delicious recipes from Davina McCall’s expert nutritionist, Max Tomlinson. Each is packed with tasty and nutritious super foods to keep you full all day.

What You’ll Need:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 250g spinach, well washed
  • 1 tablespoon lemon or lime zest – 6 free-range eggs, beaten
  • Good grating of nutmeg
  • A few cherry tomatoes, halved (optional)
  • Salt and freshly ground black pepper – 66g feta / vegetarian feta cheese

To serve:

  • Green salad
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice

What To Do:

  • Heat 1 tablespoon of the oil in a large frying pan, add the onion and cook until soft and translucent.
  • Add the spinach and zest and season with salt and pepper.
  • Cook until the spinach has wilted, then drain thoroughly.
  • Chop roughly.
  • Heat the grill to high.
  • Beat the eggs, season and add the nutmeg.
  • Heat the remainder of the oil in the pan and spread the spinach across it.
  • Add the eggs, making sure they cover the pan.
  • Cook until the base is set and well browned, then put under the grill and cook the top until just set.
  • Crumble the feta cheese over the frittata and serve with the dressed salad.
