This dish is all about buying great quality ingredients. Contrary to popular belief pork can be incredibly lean – as low as 4% fat.

Cooking Time 2 mins
What You’ll Need:
- 2 medium eggs
- 2 slices wholemeal bread
- 2 tsp wholegrain mustard
- 2 thick cut slices ham
What To Do:
- Add the eggs to a pan of boiling water and poach for 2-3 minutes or slightly longer for a firmer result
- Meanwhile, toast the bread, spread with the mustard and add the ham on top
- Place the poached egg on top and season with black pepper
