Passion Fruit Crèpes Recipe

What You’ll Need:

  •  9 passion fruit
  •  juice of 1 Simply M&S Valencia orange
  •  75g organic caster sugar
  •  15g Simply M&S Scottish butter

For the crêpes:

  • 75g Simply M&S Scottish butter
  •  100g Simply M&S plain flour
  •  1 large Simply M&S free-range egg
  •  1 large Simply M&S free-range egg yolk
  •  350ml Simply M&S milk

What To Do:

1. Halve the passion fruit and scrape out the pulp. Rub approximately half of the pulp through a sieve, collecting the juice in a small saucepan and discarding the seeds. Add the rest of the pulp, orange juice and sugar to the pan. Stir over a gentle heat until the sugar has dissolved, then simmer gently for 5 minutes. Pour into a bowl and leave to cool slightly, then whisk in the butter. set aside.

2. To make the crêpes, melt 50g butter and set aside to cool. Sift the flour and a pinch of salt into a large bowl and make a well in the centre. Add the egg and egg yolk, then gradually whisk in the milk until the batter is smooth. Whisk in the melted butter, then set aside to rest for 30 minutes.

3. Melt the remaining butter and use a little to brush an 18-20cm crêpe pan or heavy-based frying pan. Pour in a small ladle of batter and tilt the pan so that it covers the base. Cook over a medium heat for 1 minute, then flip over the crêpe and cook for another minute. Transfer to a plate and keep warm. Repeat until you’ve used all the batter.

4. Fold the crêpes into quarters and arrange on plates. Pour over the passion fruit sauce to serve.
