French Toast with Crispy Bacon & Maple Syrup

french toastThis french toast recipe really is an all American favourite that is absolutely perfect for a lazy weekend brunch.

What’s better is that it is gluten free, so if you are gluten intolerant you can enjoy a traditional breakfast just like everyone else.

Serves: 1

Preparation: 5minutes

Cooking time: 10minutes

What you’ll need:

  • Salt and pepper
  • 2 eggs, beaten in a shallow dish or deep plate
  • 2 thin slices of white or brown Genius Gluten-Free Bread, crusts removed
  • 1 tbsp oil for frying
  • 4 rashers of streaky bacon
  • Maple syrup to serve (optional)

 

What to do:

  1. Pre-heat the oven to 130°C/ 250°F/gas mark 1 or 2. Season the beaten egg.
  2. Cut the bread in half diagonally. Turn the bread slices over in the beaten egg until thoroughly coated.
  3. Heat the oil in a frying pan and fry the bacon until crispy. Place in the warming oven.
  4. Fry the egg-soaked bread in the bacon fat until golden brown on both sides.
  5. Arrange two slices of eggy bread and two rashers of bacon on each plate. Drizzle with maple syrup if desired, and serve immediately.
