This french toast recipe really is an all American favourite that is absolutely perfect for a lazy weekend brunch.
What’s better is that it is gluten free, so if you are gluten intolerant you can enjoy a traditional breakfast just like everyone else.

What you’ll need:
- Salt and pepper
- 2 eggs, beaten in a shallow dish or deep plate
- 2 thin slices of white or brown Genius Gluten-Free Bread, crusts removed
- 1 tbsp oil for frying
- 4 rashers of streaky bacon
- Maple syrup to serve (optional)
What to do:
- Pre-heat the oven to 130°C/ 250°F/gas mark 1 or 2. Season the beaten egg.
- Cut the bread in half diagonally. Turn the bread slices over in the beaten egg until thoroughly coated.
- Heat the oil in a frying pan and fry the bacon until crispy. Place in the warming oven.
- Fry the egg-soaked bread in the bacon fat until golden brown on both sides.
- Arrange two slices of eggy bread and two rashers of bacon on each plate. Drizzle with maple syrup if desired, and serve immediately.
