Easy Seafood Pie Recipe

Serves 4-6

Cooking Time: 40- 45 minutes

What You’ll Need:

For the topping:

  • 1 kg (2lb 4oz) potatoes suitable for mashing
  • 55g (2oz or ½ stick) butter
  • 3 tablespoons whole milk
  • 6 spring onions – finely chopped
  • Sea salt and pepper to taste

For the sauce:

  • 40g (1½ oz ) butter
  • 85g (3oz) shallots peeled and chopped
  • 40g (1½ oz) plain flour
  • 185ml ( ¾ cup) quality fish stock
  • 125ml ( ½ cup) dry white wine
  • 125ml ( ½ cup) double cream
  •  2 teaspoons capers – optional
  • 1 tablespoon lemon juice
  • ½ teaspoon black pepper
  • ¼ teaspoon dried chilli flakes – optional
  • 2 tablespoons chopped fresh parsley
  • Sea salt to season

For the fish:

  • 250g (9oz) boned and skinned white fish, cut into 2-3cm (1 inch) – diced
  • 250g (9 oz) boned and skinned salmon cut into 2-3cm (1 inch) – diced
  • 115g (4oz) raw small scallops with or without roe
  • 115g (4oz) cooked shelled mussels
  • 115g (4oz) raw peeled king prawns

What To Do:

To make the topping:

  1. Pre-heat the oven to 190°C /170°C (fan)/ 375°F / Gas Mark 5, peel and chop the potatoes into slices or small chunks and place into a saucepan of lightly salted water. Bring to the boil then reduce to a simmer and cook with the lid on until tender (about 10-12 minutes).
  2. Once cooked drain the potatoes and the mash. Add the butter, milk and the chopped spring onions, stir well using a silicone spatula until smooth and creamy.
  3. Adjust the seasoning to taste with some sea salt. Replace the lid and set to one side.

To make the sauce:

  1. Melt the butter in a saucepan over a medium heat.  Add the chopped shallots and cook for 2-3 minutes until soft but not brown. Remove away from the heat and stir in the flour.
  2. Stir in the white wine followed by the fish stock and return to the heat stirring or whisking until thickened and smooth. Turn off the heat and add the cream, capers, lemon juice, black pepper, chilli flakes and parsley. Season to taste with a little sea salt.

To make the pie:

  1. Combine the prepared fish with the sauce and pour into the pie dish.
  2. Pipe or spread the prepared mash potato topping on top of the fish, starting from the outer edges and working inwards.
  3. Cook in the oven for 40-45 minutes until the potato has nicely browned.
