Croque Monsieur – Jacob’s Cream Crackers

Prep time: 10 mins

Cooking time: 5 mins under the grill

Serves: 1-2 as lunch/ 4 as a snack

What You’ll Need:

  • 8 Jacob’s Cream Crackers
  • 200g good quality sliced ham

Welsh Rarebit Topping

  • 150g mature Cheddar, grated
  • 1 medium free range egg, lightly beaten
  • 2 tbsp. beer (preferably stout) or milk
  • 1 tbsp. plain flour
  • 1 tsp Worcestershire sauce
  • 1 tsp English mustard (or wholegrain)

What To Do:

  • Preheat the grill to a med setting
  • Place the Jacob’s crackers on a lined baking tray
  • Divide the sliced ham between the Crackers
  • Mix the rarebit ingredients in a bowl and spoon on top of the ham
  • Place the tray under the grill for 2-3 minutes, or until the cheese is slighted golden and melted
  • Stand for 1 minute before serving
