Bright Mash

Carrot MashLike normal mash only healthier and a whole lot more cheerful.

Serves 4 

Cooking Time: 10-15 minutes

What You’ll Need:

  • 400g Desiree or other good mashing potatoes
  • 400g sweet potatoes
  • 2 carrots
  • A big knob of butter

What to do:

1. Peel and chop the potatoes, sweet potatoes and carrots. Bring a large pan of water to the boil and add the veg. Bring back to the boil and cook for 10 to 15 minutes, until tender

2. Drain in a colander, allow to steam for a couple of minutes, then pop then veg back into the pan and mash with the butter

3. Season well and serve in jolly scoops

Notes: Good stuff to add

Before mashing:

Add 2 big handfuls of frozen peas or sweetcorn for the last few minutes of cooking.

Add 2 tablespoons of pesto when you start mashing

After mashing:

Stir in 2 tablespoons of roughly chopped roasted red peppers for a jar.
