Brie and Roasted Pepper Pitta Pizzas

Brie and Roasted Pepper Pitta PizzasA quick and healthy alternative to the classic pizza. Kids will love it too.

Serves 2

Cooking time: 5 minutes

What You’ll Need:

  • 2 white or wholemeal pitta breads
  • 2 teaspoons sun-dried or regular tomato puree
  • 1 teaspoon dried mixed herbs
  •  100g (4oz) roasted peppers (from a jar), torn into pieces
  •  100g (4oz) St Endellion Brie, sliced
  •  Freshly ground black pepper
  •  A few basil leaves

What To Do:

  •  Preheat the grill to medium-high.
  • Spread one side of each pitta bread with tomato puree and sprinkle with the dried herbs. Arrange the roasted peppers on top, then share the St Endellion Brie between each pitta bread.
  • Arrange the pitta breads on the grill rack and grill for 4-5 minutes, until the cheese is bubbling. Season with a little black pepper, then serve, scattered with a few basil leaves.

 

Cook’s tip: Another time, just use sliced tomatoes instead of peppers, or use a combination of both.
