What You’ll Need:
- 325 g (11oz) self-raising flour, sieved
- 115 g (4oz) light brown sugar
- 200 g (7oz) grated pumpkin flesh
- 160 g (5oz) Flora Buttery, melted
- 150 g (5oz) honey
- 1 Large egg
- 2 tbsp demerara sugar
What To Do:
- Preheat oven to 160°C, 140°C fan, Gas mark 3.
- Line a 23cm loaf tin with baking paper. Set aside.
- In a large bowl, combine the flour, light brown sugar and grated pumpkin. Add the Flora buttery, honey and egg. Mix well until batter is smooth, without lumps.
- Pour mixture into prepared loaf pan. Sprinkle with demerara sugar.
- Bake for 50 mins or until a skewer comes out clean.
- Leave to rest for 15 minutes before serving.
