Pumpkin Bread

Pumpkin BreadFor a more grown-up Halloween dish, embrace seasonal ingredients such as pumpkin and swap a banana loaf for this festive pumpkin bread recipe.

What You’ll Need:

  • 325 g (11oz) self-raising flour, sieved
  • 115 g (4oz) light brown sugar
  • 200 g (7oz) grated pumpkin flesh
  • 160 g (5oz) Flora Buttery, melted
  • 150 g (5oz) honey
  • 1 Large egg
  • 2 tbsp demerara sugar

What To Do:

  • Preheat oven to 160°C, 140°C fan, Gas mark 3.
  • Line a 23cm loaf tin with baking paper. Set aside.
  • In a large bowl, combine the flour, light brown sugar and grated pumpkin. Add the Flora buttery, honey and egg. Mix well until batter is smooth, without lumps.
  • Pour mixture into prepared loaf pan. Sprinkle with demerara sugar.
  • Bake for 50 mins or until a skewer comes out clean.
  • Leave to rest for 15 minutes before serving.
