Every chocoholic’s dream come true these baked berry tartelette treats are almost too good to be true. Enjoy. 

Serves 4 – 6

What You’ll Need: 

Tartlettes

  • 100g flour
  • 1 tablespoon cocoa powder
  • 50g icing sugar
  • 50g cream cheese, softened
  • 50g butter, softened
  • 500g mixed berries, washed
  • 3 tablespoons orange liqueur
  • 2 tablespoons vanilla sugar

Chocolate Cream

  • 125ml semi-skimmed milk
  • 125ml double cream
  • 100g Lindt Cooking 70% chocolate
  • 2 eggs , separated
  • 20g cocoa powder
  • Pinch of salt
  • 50g caster sugar

What To Do: 

  • Mix the flour, cocoa powder, cream cheese and butter together and knead until it forms a soft and smooth dough. Wrap in cling film and place in the refrigerator for one hour
  • Add the liqueur and vanilla sugar to the mixed berries and leave to soak
  • Preheat the oven to 200°C. Place the dough onto a floured working surface and roll it out into a circle shape of approx 10cm in diameter. Place the circles in a buttered and slightly floured tartelette form tray and bake in the oven for 12-14 minutes
  • Break the chocolate into small pieces and mix together with the egg yolks, milk and pudding powder. Gently heat the cream and pour in the milk mixture, let it cook for approx 30 seconds, stirring continuously. Pour the cream into a bowl, stir in the chocolate pieces and leave to melt
  • Add a pinch of salt to the egg whites and whisk until stiff, gradually adding the sugar whilst beating. Fold the egg white into the cream and mix carefully
  • Divide the berries into the tartlets and cover with a spoonful of cream. Bake in the oven for 30 seconds -1 minute. Sprinkle some icing sugar over them and serve warm.
