Soya bean, Cherry Tomato, Chorizo and Leerdammer Light salad

For clean and healthy eating this January, look no further than this bean, tomato, chorizo and Leerdammer salad. 

Preparation: 10 mins

Serves: 1

What You’ll Need:

  • 100g frozen fresh soya beans
  • 25g chorizo, skinned and diced
  • 2 spring onions, finely chopped
  • 6 cherry tomatoes, halved
  • 1 tbsp low fat dressing
  • 2 slices Leerdamer Light, cut into thin strips

What To Do:

  • Cook the soya beans in a pan of boiling water for 5mins. Drain and cool
  • Put the chorizo in a cold frying pan, then stir it over a medium heat for a few mins until it browns a little
  • Mix the beans, spring onions, tomatoes, dressing and Leerdammer Light
  • Sprinkle the chorizo over
