The Fabulous Baker Brothers give us another of their fantastic family friendly recipes. A classic pudding, using the brioche to add a new richness without becoming too sweet.
Serves 4
What You’ll Need:
- 5 slices of brioche
- 50g soft butter
- 20g raisins
- 3 eggs
- 3 yolks
- 50g sugar
- 300ml cream
- 300ml milk
- 1 vanilla pod split, and seeds scraped out with the point of a knife
What To Do:
1. Butter the brioche on both sides. scatter the raisins into an oven dish. Place the slices of brioche on top. Mix the eggs, yolks, sugar, cream, milk and vanilla seeds, and pour over the brioche. dunk the slices a few times to drown them.
2 Let the pudding sit for 20 minutes before baking, so the custard soaks into the bread. heat the oven to 120°c. Place in the oven for 30 minutes or until the custard has set. serve while still warm.
Baker Brothers’ Top Tips:
- Vanilla extract is a suitable substitute for vanilla seeds from a pod, but not quite the same.
- Keep vanilla pods in the fridge; they last longer.
- Place used pods in the sugar jar to make vanilla sugar.
- Some orange zest and a shot of brandy in the custard can lift spirits on a cold day.
