Breakfast Waffles

What You’ll Need:

  •  2 tsp vanilla extract
  • 150ml organic almond milk
  • 50g organic coconut oil, melted
  • 60g homemade apple sauce (see p44) or unsweetened apple sauce
  • 2 tablespoons organic honey
  • 70g organic buckwheat flour
  • 40g organic rice flour
  • 30g arrowroot
  • 2 tbsp. organic baking powder
  • Pinch of Himalayan salt

What To Do:

  • Preheat waffle maker
  • In a large bowl, whisk all wet ingredients together, except the coconut oil
  • In a separate bowl weigh all dry ingredients and mix to combine
  • Add dry to wet and whisk
  • Add coconut oil to mixture and whisk until smooth
  • Grease the waffle maker and pour the mixture in (this mixture will make 2 waffles in my maker)
  • Cook for 3 minutes
  • Serve with my homemade hazelnut spread, coconut cream, or pure organic maple syrup and fruit- whatever takes your fancy!
