Salting the cucumber draws out some of the liquid making it crunchy, and although you rinse the salt away it leaves a slight saltiness, as you would get around the rim of the Margarita cocktail.
Makes: 6 x 50ml lolly pops
Prep time: 10 mins plus 4-5 hours freezing time
What You’ll Need:
- 1 cucumber
- 1 tsp. salt
- 3 limes
- 75ml lime juice
- 35ml Tequila
- 15ml Cointreau
- 100ml lemonade
- 50ml sugar syrup
- 1 tsp Frank’s RedHot Original Sauce or Frank’s RedHot Chilli n Lime Sauce
What To Do:
- Cut 6 ribbons along the length of the cucumber using a peeler. Place in a colander and sprinkle with the salt. Set aside in the sink to drain.
- Zest 2 of the limes and juice all 3. Combine all the remaining ingredients with the lime zest and juice.
- Rinse the cucumber ribbons and pat dry with kitchen paper. Loosely wind round a lolly stick and place up right in the mould. Pour over the margarita mixture and freeze for 4-5 hours until solid.
Tip:
- For a virgin version omit the tequila and orange flavoured liqueur adding in an extra 50ml lemonade.
