Lyle’s Pancake Monster

PANCAKE MONSTERServes: 8-10

What You’ll Need:

  • 100g/4oz self raising flour
  • 2 tbsp Tate & Lyle Granulated Cane Sugar
  • 1 medium egg, beaten
  • 150ml/ 1/4pint milk
  • Butter, to taste
  • Lyle’s Golden Syrup® – Chocolate

What To Do:

  • Mix the flour and sugar together in a bowl. Make a hole in the centre and stir in the egg and milk then whisk until the batter is thick and smooth and has no lumps. (The mixture should have the consistency of thick cream.)
  • Preheat and very lightly grease a heavy-based frying pan to a medium heat. Carefully drop 22.5ml/1 1/2 tbsp of the mixture onto the pan. Only cook 2 or 3 ‘blobs’ of mixture at a time.
  • When you see the bubbles in the pancake mixture starting to burst, carefully turn the pancakes over using a palette knife or spatula. Cook the other side for a further 2-3 minutes or until golden brown.
  • Place onto clean kitchen paper and pile up pancakes with paper between each one. This will keep them hot and moist, whilst cooking the remainder.
  • When ready to serve stack up 3 American style pancakes with fresh chopped strawberries and slices of banana.
  • Squeeze generous amounts of Lyle’s Golden Syrup – Chocolate in between the layers and see if you can do a self portrait on the top pancake with extra syrup!
