Two Chicks

Post-TWO_CHICKS_ANNA_ALLAWe speak to Anna Richey, co-founder of Two Chicks, the innovative liquid egg product. 

What first inspired you to bring this niche product to the UK?

I had spent some time living in LA where egg white omelettes pretty much became a staple in my diet. When I returned to the UK  I didn’t want the hassle of separating eggs and thought it was crazy that egg whites weren’t available in our supermarkets. After conducting a little research, I realised I was not the only one looking for them. My friend Alla also recognised the gap in the market so we set up Two Chicks.

What are the main differences between the LA and London food scene? 

In LA at first glance I would say that the primary focus is on low calorie, low carb, low fat etc, with a lesser emphasis on what actually goes into a product and the manufacturing process. Whereas in the UK I think people are more aware of whether food is organic or contains preservatives, for example, with health being the primary concern over weight loss.

Food like fashion has trends, what’s next for AW15/16?

I think people are really looking at the importance of protein in one’s diet. That coupled with convenience. So fingers crossed we have some scope here.

What are the benefits of cutting out the yolk?

The yolk contains all the fat and cholesterol in the egg, whereas the white has none. So if reducing these things is your object then then consuming just the white is a better choice.

In this age of food conservation and frugality, we have to ask what happens to the yolks?

The yolks are never wasted; they are used by cake manufacturers or mayonnaise companies, for example.

Was it tough getting your product into supermarkets here?

Yes it was a question of dogged perseverance and literally never giving up. I had the buyers numbers on redial and wouldn’t stop until I got a meeting in the diary. Then once in front of them, Alla and I not only had to introduce them to a new product and brand but a whole new market, so it was a real educational process.

Do you have a favourite egg white recipe?

My business partner Alla has been coming up with some great recipes recently – one I  know she loves is an egg white omelette with spinach and tomatoes cooked on coconut oil, topped with chilli flakes and pumpkin seeds – served with a side of salmon and beetroot along with low fat Greek yogurt. Egg white is also really good in a protein pancake mixed with oats and cottage cheese and topped with fruit and a drizzle of honey.

What are your tips for maintaining a healthy lifestyle?

Everything in moderation! You need to be happy in your head too – it would seem a shame to miss out on wine and chocolate!

When you are not working hard on your business, how do you like to unwind? 

I like to write.

Can you tell us about the chicks which help create your delicious eggs? 

They are free to roam – we would never use eggs from battery hens.

The Two Chicks range has expanded since first launching, can you tell us what is next for the brand? 

I can only say watch this space 🙂

Do you have any favourite healthy eating spots in London?

I love the seafood in Scott’s. And the juices in Crush are pretty good.

When you’re not busy working, what do you like to do to unwind? 

Horse riding, theatre.

What top tips would you give our readers who would like to start their own business?

That each stage takes so much longer than you think it will so factor that in every step of the way.

Do you have a motto for life? 

Don’t look down and don’t give up. If you truly believe in an idea and persevere you will get there.
