Prosecco Iced Dessert with Cherry Liqueur Cream

Prosecco Cherry DessertServes: 4 people

Preperation Time: 15 mins

Freezing Time: 3-4 hours

What You’ll Need:

  • 400ml Prosecco
  • 100ml Liquid from Cherry Jar
  • 30g Sugar
  • 200g Cherries
  • 1 Lemon Juice and Zest
  • 1 Lime zest only
  • Cream topping
  • 500ml whipping cream
  • Seeds from 1 vanilla pod
  • 55g caster sugar 1.5tbsp Cherry Liqueur (Kirsch)

What To Do:

 

  • In a pan add the liquid from the cherries and sugar and bring to boil to dissolve the sugar, remove from heat and allow to cool
  • Mix in Prosecco and pour into a thin tray or tub that will fit in the freezer, the shallower the tray the quicker it will freeze
  • Stir every 30 mins or so until the mix is slushy, this could take 3-4 hours
  • Take the Cherries and mash them with a fork add a little more liquid from the jar if needed but don’t make them too wet and ensure they are room temperature when serving
  • To make the cream add all the ingredients to a mixer or use an electric whisk until stiff peak stage
  • Chill your glasses in the freezer for a few mintues then divide the mashed cherries between each glass
  • Remove the prosecco ice from the freezer and add some lemon juice and mix in. Divide between the glasses spooning on top of the cherries
  • Lastly spoon or pipe the cherry cream on top of the prosecco ice and finish with fresh lemon and lime zest
