HOMEMADE VEGAN GRANOLA WITH POACHED PEARS

PearsOur homemade granola is energy boosting, naturally flavoured, full of protein, good fats and low carb. A delicious and nutritious breakfast that will kick-start your day, or a perfect pick me up snack to keep you going at your desk!

What You’ll Need:

  • 300g oats
  • 50g sunflower seeds (or seeds of your choice)
  • 50g macadamia nuts (I roast mine before for extra yum)
  • 40ml Macadamia nut oil
  • 150ml maple syrup
  • drop of vanilla essence
  • pinch of cinnamon
  • 50g chopped dates

What To Do:

  • Preheat oven to 170
  • Crush macadamia nuts
  • Mix the oil, maple syrup and vanilla in a massive bowl (you’ll understand why later)
  • Add the oats and have a big stir covering them all in gooey stuff
  • Pour out half onto a baking sheet (so do it in 2 batches)
  • Bake for 20mins
  • Add nuts, seeds and dates
  • Bake for 5-10 mins depending how golden you like
  • Let it cool if you can

(Keeps for up to 4 weeks in an airtight container)
