Fattoush Salad – Jacob’s Sundried Tomato and Basil Ciabatta

What You’ll Need:

  • Jacob’s Sundried Tomato and Basil Ciabatta Crackers

Dressing

  • 75ml good olive oil
  • ½ large or 1 small lemon, juice and zest
  • 1 small clove garlic, crushed
  • 1 tbsp. sumac (a tangy, aromatic spice from the Middle East, available in the supermarket!)
  • Salt and freshly ground black pepper

Salad

  • Approx. 20 ripe cherry tomatoes, halved
  • ½ cucumber, peeled and cut into chunks
  • 4 spring onions, trimmed and sliced
  • 8 radishes, sliced
  • Handful rocket leaves
  • Small bunch fresh mint, chopped
  • Small bunch fresh parsley, chopped

What To Do:

  • Place the dressing ingredients into a large bowl and whisk together
  • Add the salad ingredients to the dressing and toss well to combine
  • Transfer to a serving dish and when you are ready to serve, top with broken Jacob’s Sundried Tomato and Basil Ciabatta Crackers
