Mango and Coconut Loaf

Mango and Coconut LoafAll kids love cake and with this fruity loaf you can let your children enjoy a second helping.

Get your kids involved in the preparation and they will be excited to have a slice when it’s warm out of the oven.

Serves: Makes 1 loaf

Preparation time: 10minutes

Cooking time: 45minutes

What you’ll need:

  • 225g Plain flour
  • 200g Well chopped mango
  • 110g Caster sugar
  • 85g Coconut oil melted (and cooled)
  • 2 Large eggs beaten
  • 30g Shredded coconut
  • 3 tsp Baking powder
  • Makes a loaf to fit a 21 x 10cm loaf tin

What to do:

  1. Preheat oven to 180C
  2. Grease loaf tin with coconut oil and line base with baking paper or better still use a large paper lining case
  3. Sift flour and baking powder together and mix lightly
  4. Mix egg, cooled coconut oil and sugar then add mango
  5. Fold flour mixture into egg mixture and add shredded coconut
  6. Pour mixture into baking tin
  7. Bake for approx. 35-45 mins until a skewer comes out clean and the loaf is spongy to the touch. Note don’t worry if you see mango on the skewer, you want it moist.
  8. Cool on a wire rack
  9. Dust with icing sugar once cooled
