Passion Fruit Cordial

Passion Fruit CordialUltra refreshing, this is a perfect cooling drink for a hot summer’s day.

Preparation Time: 30 minutes

Cooking Time: 10 minutes

Serves: 3 1/4 pints

What You’ll Need:

  • 900g (2lbs) Tate & Lyle Fairtrade Golden Syrup Sugar
  • 510ml (18floz) water
  • 1 rounded tsp citric acid
  • 370ml (13floz) passion fruit pulp, about 16 passion fruit
  • 100ml (3½floz) lime juice, about 5 limes
  • crushed ice
  • sparkling mineral water, to taste

What To Do:

  • Combine the Tate & Lyle Golden Syrup Sugar, water and citric acid in a pan and stir until the sugar has dissolved. Bring to the boil, then remove from the heat and leave to cool.
  • Add the passionfruit pulp and lime juice.
  • To serve, fill glasses with crushed ice, pour over the cordial and top up with mineral water to taste.

Make Ahead:

Make the cordial up to two weeks ahead of time and store in the fridge.
