Ultra refreshing, this is a perfect cooling drink for a hot summer’s day.

Serves: 3 1/4 pints
What You’ll Need:
- 900g (2lbs) Tate & Lyle Fairtrade Golden Syrup Sugar
- 510ml (18floz) water
- 1 rounded tsp citric acid
- 370ml (13floz) passion fruit pulp, about 16 passion fruit
- 100ml (3½floz) lime juice, about 5 limes
- crushed ice
- sparkling mineral water, to taste
What To Do:
- Combine the Tate & Lyle Golden Syrup Sugar, water and citric acid in a pan and stir until the sugar has dissolved. Bring to the boil, then remove from the heat and leave to cool.
- Add the passionfruit pulp and lime juice.
- To serve, fill glasses with crushed ice, pour over the cordial and top up with mineral water to taste.
Make Ahead:
Make the cordial up to two weeks ahead of time and store in the fridge.
