Walnut, Chocolate and Avocado Mousse

Preparation Time: 10 minutes plus chilling

What You’ll Need:

  • 250g California Walnuts
  • ¼ teaspoon salt
  • 2 teaspoons walnut or vegetable oil (or as needed)
  • 3 tablespoons sweet cocoa powder
  • 2 tablespoons honey
  • 2 teaspoons vanilla extract
  • 1 ripe avocado, peeled and pitted
  • California Walnuts, fresh raspberries and mint sprigs, to decorate

What To Do:

  • Place the walnuts in the bowl of a food processor and grind them until they become sticky or paste-like. Add the salt and then add the oil, a few drops at a time, and blend until the mixture forms a smooth butter.
  • Add the cocoa powder, honey, vanilla and avocado to the food processor and blend until smooth.
  • Spoon into small bowls. Decorate with California Walnuts, fresh raspberries and mint sprigs and chill for 1-2 hours.
