NO-BAKE VEGAN BROWNIES

Makes: 16-20 pdate-no-bake-brownie1

Preparation Time: 15 mins

What You’ll Need:

  • 100g whole almonds
  • 100g walnut pieces
  • 50g quinoa flakes
  • 75g dried apple rings
  • 5tbsp raw cacao powder, plus 1tsp extra to dust
  • 200g pitted medjool dates
  • 4tbsp Clarks date syrup
  • 2tsp vanilla extract
  • 40g dried cranberries or sour cherries, roughly chopped

What To Do:

  • In a food processor place 75g of the almonds, 75g of the walnuts, the quinoa flakes, apple rings and cacao powder. Whizz until the mixture forms fine crumbs. Add the dates, date syrup and vanilla extract and pulse until finely chopped and dough-like.
  • Line a 20cm square tin with baking paper. Spoon in the mixture, smoothing the surface. Roughly chop the remaining almonds and scatter over the brownies with the remaining walnuts and cranberries. Press into the surface. Dust with the extra cacao and chill for at least 1 hour. Slice into bars. Keep chilled and use within 3 weeks.
