The founder of The Richmond in Hackney teams up with Natalie Lee-Joe to launch a new yakitori restaurant in Dalston.

Brett Redman opened The Richmond to great critical acclaim earlier this year, and now he is turning his hand to the Japanese dining concept of yakitori restaurants. Yakitori is a little similar to the beloved finger food chicken satay; it consists of chicken skewers grilled over hot open coals. Jidori plans bring this popular Japanese street food to East London for the first time.

Open at lunch and dinner times, the menu predominantly focuses on yakitori skewers. They use all parts of the chicken, and are noted for their succulent flavour, the cooking method avoiding any drying of the chicken. Served alongside them will be a selection of small plates and rice dishes. The bar will serve a short list of cocktails with Japanese spirits and flavours, alongside Japanese craft beers, and of course the obligatory sake.

Jidori will work closely with suppliers to provide the most authentic experience possible. For example Nama Yasai, specialist Japanese agricultural growers will supple the vegetables and herbs, and trusted suppliers of meat such as Goosnargh will be called upon for the chickens.

The Richmond has become a favourite for classic English cooking, we’re no doubt Brett Redman’s talents will shine through in this new off-piste culinary venture.

Jidori will host a soft launch on the 4 – 5 of December, opening its doors officially on Tuesday 8th December.
