Simple and easy to make, nothing can possibly go wrong with this lemon tart recipe. Citrusy and creamy this dessert is both refreshing and indulgent. Serve with a dollop of cream or vanilla ice-cream if you’re feeling extra naughty.

What You’ll Need:
- 160 gr butter
- 3 eggs
- 160gr caster sugar
- Rind of 2 lemon, grated
- Juice of ½ lemon
- 1 Short crust pastry base
What To Do:
- Preheat oven 180 degrees; grease a tart tin with butter.
- Beat eggs with sugar and stir in lemon rind and juice; then stir in the butter.
- Roll out the pastry and trim the edges; pour the lemon mixture and bake for 30min.
- Remove from tin and cool it on a wire rack
- Sprinkle with icing sugar and serve.
