Lemon Tart Recipe

Lemon Tart PostSimple and easy to make, nothing can possibly go wrong with this lemon tart recipe. Citrusy and creamy this dessert is both refreshing and indulgent. Serve with a dollop of cream or vanilla ice-cream if you’re feeling extra naughty. 

Serves 6

Cooking time: 40 mins 

What You’ll Need: 

  • 160 gr butter
  • 3 eggs
  • 160gr caster sugar
  • Rind of 2 lemon, grated
  • Juice of ½ lemon
  • 1 Short crust pastry base

What To Do: 

  • Preheat oven 180 degrees; grease a tart tin with butter.
  • Beat eggs with sugar and stir in lemon rind and juice; then stir in the butter.
  • Roll out the pastry and trim the edges; pour the lemon mixture and bake for 30min.
  • Remove from tin and cool it on a wire rack
  • Sprinkle with icing sugar and serve.
