Sweetcorn fritters with Organic Greek Yoghurt

Sweetcorn FrittersForget chips and dip, this quick and simple party food recipe will be sure to impress your guests whatever the weather. Perfect for summer garden parties or BBQs.

Serves: 4

What You’ll Need:

  • 110g self raising flour
  • 1 medium organic egg, beaten
  • 1 egg white, whisked to soft peaks
  • 30ml organic milk
  • 2 fresh organic corn on the cob
  • salt and pepper
  • 200g greek yoghurt
  • 1 tbsp chopped chives
  • 2 pinches salt
  • 2 tbsp grated horseradish
  • vegetable oil and butter for frying

What To Do:

  • Mix the chives, yoghurt, horseradish and seasoning in a bowl and keep chilled
  • Remove the kernels from the corn and place in a bowl with flour
  • Mix in beaten egg and milk
  • Fold in egg white
  • Pan fry on a medium low heat with a little oil, and butter if you like, by using a spoon to scoop and dollop into the pan.
  • Pan fry until golden brown on both sides
  • Serve warm with the dip
