Chicken and Chorizo Casserole

chicken & chorizo casserole postBe adventurous this Tuesday with an unearthed Portuguese recipe for chicken and chorizo casserole.  A great choice for meat-lovers this meal is filled with a variety of delicious meat ingredients and flavours for you to enjoy. To finish, drizzle olive oil and add a few drops of lemon juice to bring out the flavours of the dish. 

Serves 2

Cooking time: 25 – 30 mins

What You’ll Need: 

  • 2 red onions
  • 200g chorizo sausage
  • 1L chicken stock
  • Half savoy cabbage, shredded
  • 2 large tins chickpeas, drained
  • Juice one lemon

What To Do:

  • Heat dash olive oil in large saucepan. Add sliced onions and diced chorizo.
  • Cook gently until soft, about 10 minutes. Season well.
  • Add stock. Bring to boil. Add cabbage and chickpeas and simmer 4-5 minutes until cabbage is cooked.
  • Serve in bowls with squeeze of lemon juice and drizzle of olive oil.
