What you’ll need:
- 1 smoked mackerel fillet
- 35g broccoli florets
- Small handful baby spinach leaves
- 2 radishes, sliced
- 3 cherry tomatoes, halved
- ½ red pepper, sliced
- Small handful alfalfa sprouts
- ¼ tsp mustard
- ½ tsp white wine vinegar
- 1 tsp vegetable oil
What to do:
- Heat the mackerel fillet according to pack instructions.
- Steam or blanch the broccoli in boiling water then refresh under cold running water. Drain.
- Toss together the broccoli, spinach leaves, radishes, tomatoes, pepper and sprouts.
- Break up the mackerel fillet and add to the salad.
- Mix together the mustard, white wine vinegar and oil and use to dress the salad.
