What You’ll Need:
•1/2 French bread baguette about 25cm long
•4-5 triangles of The Laughing Cow Extra Light
•2 vine tomatoes, seeded and finely chopped
•20g onion, finely chopped
•1 tbsp garlic, finely chopped
•1 tbsp fresh basil, finely chopped
•1 tbsp extra virgin olive oil
•1/2 tbsp lemon juice
What To Do:
- Cut baguette into 1-inch diagonal slices. Arrange in a single layer on a baking sheet and grill until lightly toasted
- Spread a layer of The Laughing Cow Extra Light cheese onto each baguette slice and set aside
- Combine remaining ingredients in a medium sized bowl and spoon mixture onto prepared baguette slices
