Jax Coco Quinoa Coconut Cacao Bars

Quinoa Coconut-Cacao BarsMake these quinoa coconut cacao bars for a mid afternoon snack and you’ll feel guilt-free for snacking!

What You’ll Need:

  • ¼ cup pistachios
  • ¼ cup cranberries
  • 1 cup puffed quinoa
  • pinch of salt
  • 2 tbsp honey
  • 4 heaped tbsp cacao powder (or regular unsweetened cocoa powder will do, if you don’t have cacao)
  • 8 tbsp Jax Coco extra virgin coconut oil

What To Do:

  • Melt together the coconut oil, raw cacao powder, honey and salt.
  • Stir in the puffed quinoa cereal, cranberries and pistachios.
  • Pour into a lined loaf pan and chill until set.
  • Cut into bars and serve.
