Gazpacho

MasterChef GazpachoQuick and easy to make, serve with crusty bread this palette cleansing starter is ideal for starters.

Serves: 4

What You’ll Need:

  • 3 tbsp MasterChef Cotswold Rapeseed oil
  • 500g tomatoes, cored and chopped
  • 200g tin plum tomatoes
  • ½  red pepper, diced
  • ½  green pepper, diced
  • Small cucumber portion, peeled
  • 2 garlic cloves, peeled
  • 40ml sherry vinegar
  • Salt and ground black pepper

Serve with: Sliced red pepper, sliced green pepper, sliced cucumber, MasterChef Chilli infused oil.

What To Do:

  • Using a food processor, blend the tomatoes.
  • Add the plum tomatoes, garlic, peppers and cucumber and blend for 2-3 minutes.
  • Remove from the blender and stir in oil, vinegar, salt and pepper
  • Place in a container and leave in the fridge overnight to chill

MasterChef Tip

To serve: Spoon your Gazpacho into a deep bowl and season with salt and pepper if desired. Top with diced red peppers, cucumber and a basil leaf. For a mild heat drizzle with MasterChef Chilli Infused oil.
