Quick and easy to make, serve with crusty bread this palette cleansing starter is ideal for starters.
Serves: 4
What You’ll Need:
- 3 tbsp MasterChef Cotswold Rapeseed oil
- 500g tomatoes, cored and chopped
- 200g tin plum tomatoes
- ½ red pepper, diced
- ½ green pepper, diced
- Small cucumber portion, peeled
- 2 garlic cloves, peeled
- 40ml sherry vinegar
- Salt and ground black pepper
Serve with: Sliced red pepper, sliced green pepper, sliced cucumber, MasterChef Chilli infused oil.
What To Do:
- Using a food processor, blend the tomatoes.
- Add the plum tomatoes, garlic, peppers and cucumber and blend for 2-3 minutes.
- Remove from the blender and stir in oil, vinegar, salt and pepper
- Place in a container and leave in the fridge overnight to chill

To serve: Spoon your Gazpacho into a deep bowl and season with salt and pepper if desired. Top with diced red peppers, cucumber and a basil leaf. For a mild heat drizzle with MasterChef Chilli Infused oil.
