High in protein and vitamin B these fresh king scallops with basil and lime butter are a healthy way to end the day. Incredibly easy to cook and with reasonably priced ingredients this recipe is ideal for those wanting to indulge in a tasty meal but without all the fuss of preparing it. Serve with salad leaves if you are wanting a carb-free meal, or if you are feeling a bit peckish add some cooked new potatoes.

What You Need:
- Oil
- 9 fresh king scallops, shucked and cleaned
Basil and lime butter:
- 85g (3oz) of butter, softened
- 2 tbsp washed and chopped fresh basil
- 1 lime – juice and rind
What To Do:
- Heat some oil in a frying pan
- Remove the coral (or roe) from each scallop and set aside. Slice the scallop in half and set aside.
- In a small bowl mix the basil and lime butter ingredients together and set aside.
- Add 40g (1½ oz) of the flavoured butter to a frying pan. Melt over a medium heat and then add the scallops. Dot with the remaining butter and cook for 3-4 minutes turning occasionally.
- Spoon the juices from the pan over the scallops and serve with sliced new potatoes and salad leaves tossed in a little vinaigrette dressing.
