Wholegrain Bagel Thin with Roast Beef, Watercress and Mustard

Roast Beef BagelNothing quite beats a beef bagel. For a light supper meal, look no further than this bagel recipe and simply serve with a crisp green salad.

Serves 2

What You’ll Need:

  • 6 baby plum tomatoes, halved
  • 1 tbsp cream cheese
  • 1 tbsp Dijon mustard or horseradish sauce
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Sea salt and freshly ground black pepper
  • 2 New York Bakery Co duo thin bagel
  • Around 4 slices of cold roast beef
  • Handful of watercress
  • 3-4 pickled gherkins

What To Do:

  • Preheat the grill. Put the tomatoes on a baking sheet and grill until the tomatoes start to soften and roast.
  • Put the cream cheese, mustard (or horseradish), oil and lemon juice and beat all the ingredients together until smooth. Season well.
  • Split the bagels and spread half the cream cheese mixture over the base of each. Top with the roast beef, tomatoes and the watercress then put the top of the bagel on each and serve with the gherkins.
