Ratatouille Stuffed Tomatoes

Ratatouille Stuffed TomatoesTry this delicious recipes from Davina McCall’s expert nutritionist, Max Tomlinson. Each is packed with tasty and nutritious super foods to keep you full all day.

What You’ll Need:

  • 8 ripe tomatoes
  • 1 onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 small yellow bell pepper, seeds removed, chopped
  • 1 small red bell pepper, seeds removed, chopped
  • 1 courgette, chopped – 1 tablespoon olive oil
  • 1 teaspoon basil, finely chopped – 1 teaspoon red wine vinegar
  • 4 teaspoons pine nuts
  • Flat-leaf parsley
  • Salt and freshly ground black pepper

To serve:

  • Green Salad
  • 2 tablespoons olive oil – Juice of 1 lemon

What To Do:

  • Heat the grill.
  • Cut a 1cm slice off the top of each tomato. Reserve the tops. Scoop out the seeds and some of the flesh, leaving a 1cm wall of flesh.
  • Lightly salt the inside of the tomatoes and turn them, cut sides down, on a plate lined with absorbent kitchen paper.
  • Heat the oil in a frying pan and cook the onions over a low heat for 2-3 minutes.
  • Add the garlic, peppers and courgettes and cook for 6-8 minutes until tender. Season to taste with salt and pepper.
  • Remove from the heat and stir in the basil and vinegar.
  • Spoon the ratatouille into the tomatoes. Sprinkle with pine nuts. Grill the tomatoes under a medium heat until the pine nuts are toasted and the tomatoes are softened.
  • Dress the salad with the oil and lemon and season with salt and pepper.
  • Replace the tops on the tomatoes and serve immediately, garnished with parsley.
