Newman’s Own Cheesy Potato Skins with Ranch Dressing

Cooking time: 15 minutes

Serves: 2-4

What You’ll Need:

  • 2 potatoes (baking)
  • 1 x barbecued chicken
  • 4 x spring onions (chopped)
  • 60ml Newman’s Own Ranch dressing
  • 120ml mozzarella cheese
  • 2 slices bacon, cooked and roughly chopped
  • 60ml cheddar cheese, grated
  • Newman’s Own Sticky BBQ sauce to serve (optional)

What To Do:

  • For the potatoes; preheat oven to 200C. Wash potatoes and rub with sea salt. Then place them straight into the oven to bake for an hour or until completely tender.
  • Once potatoes are cooked through, slice in half and scoop out most of the potato into a bowl.
  • Roughly chop the chicken, you’ll need about 140g. Mix this with about half of the potato (keep the rest of that for fish cakes!) and toss with the Ranch dressing and mozzarella and fill the potato halves with this mixture.
  • Top with the bacon, spring onions and the cheddar then place on a lined baking tray and cook for 15 minutes or until golden.
  • Serve the skins, drizzled with the Sticky BBQ Original marinade if using.
