Chicken Arrabiata

Chicken ArrabiataYou can’t go wrong with a chicken arrabiata, so fire up the stove and warm up this winter with this quick and simply tangy pasta dish perfect for the whole family. 

Serves 2

Cooking Time: 15-20 minutes

What You’ll Need:

  •  Chicken Rub
  • Mediterranean Paste
  • Sundried Tomato Seasoning
  • Diced Chicken Breast (220g)
  • 1 Onion, diced
  • 1 Can Chopped Tomatoes
  • Dried Tagliatelle (120g) or fresh (200g)
  • 1 Tbsp Oil (olive oil or sunflower oil)
  • Chopped flat leaf parsley

What To Do:

  • Coat the diced chicken with the Chicken Rub and a small amount of oil.
  • Bring 400ml water to the boil, and add the tagliatelle – cook as per the instructions on the pack, around 8-12mins.
  • Meanwhile fry the diced chicken in 1/2 tbsp oil, lightly on a medium heat, for 8-10mins
  • While the pasta and chicken are cooking: add to a saucepan 1/2tbsp oil and the chopped onion and fry for 2-3mins. Then add the Mediterranean Paste, chopped/tinned tomato, and Sun Dried Tomato Seasoning and simmer for around 5 mins.
  • Divide the pasta between two bowls and top with the arrabiata sauce and pan-fried chicken breast.
  • (Optional) Add a sprinkle of chopped parsley.
