PECAN AND ALMOND BUTTER COOKIES

Makes: 5-7

What You’ll Need: 

  • 2 scoops Blue Label Whey® (vanilla)
  • 5 tbsp golden flax milled
  • 4 tbsp shredded coconut
  • 1 tbsp almond butter
  • 1 tbsp peanut butter
  • 1 tsp coconut oil
  • 6 dates
  • 1 tbsp of honey
  • 1 tsp cinnamon
  • 4 squares of dark chocolate (80%)
  • 8 pecans 

What To Do:

  • Chop the pecans and chocolate into small pieces.
  • Create a paste by blending the honey, dates and a few tablespoons of boiling water.
  • Put all the ingredients including the date paste into a food processor and blend until you have achieved a dough-like substance. You can add small amounts of water until you get the consistency you desire.
  • Mould the dough into cookie shapes and place in oven at 180o for 10 minutes or until golden brown on top.
