Halloween Cake

Halloween CakeThis will most certainly be the icing on the cake at your Halloween party. More is more with this cake and get the kids involved to make a devilish dessert for your guests. 

Serves 8-12

Ingredients:

  • 225 g (8oz) self-raising flour
  • 225 g (8oz) light brown sugar
  • 2 tsp mixed spice
  • 1½ tsp bicarbonate of soda
  • 350 g (12oz) pumpkin flesh-only, grated
  • 3 Medium eggs, lightly beaten
  • 175 g (6oz) Flora Buttery, melted
  • Zest of 1 orange
  • 50 ml orange juice

Icing

  • 300 g (10oz) icing sugar, sieved
  • 70 g (2½oz) Flora Buttery
  • 40 g (1½oz) cocoa powder, sieved
  • 40 ml semi-skimmed milk
  • 85 g (3oz) dark chocolate, melted

To Decorate

  • Gravestone-shaped gingerbread
  • Jelly worms (optional)
  • Chocolate finger biscuit sticks
  • Chocolate biscuits for crumbs

 What To Do:

  • Preheat oven to 200°C, 180°C fan, Gas mark 6. Line 23cm square cake tin. Set aside.
  • In a large bowl sieve together flour, sugar, mixed spice and bicarbonate of soda. Mix in grated pumpkin. In a separate bowl, whisk together the eggs, Flora Buttery, orange zest and orange juice.
  • Add the wet mixture to the sieved dry ingredients and combine well until you have a smooth batter without lumps.
  • Pour into prepared cake pan, and bake for 60-70 minutes or until skewer comes out clean.
  • Leave to cool completely before decorating. Remove from cake tin and prepare for decorating fun!

To Decorate

  • First make the icing. In a large bowl, add the icing sugar, Flora Buttery and cocoa powder, using an electric hand mixer, mix until well combined. Turn the mixer down to low and slowly drizzle in the melted chocolate.
  • Cook your gingerbread gravestones ahead of time. When cooled you can part dip them in chocolate if you like.
  • Spread your chocolate icing all over the top of the cake and the sides.
  • Quickly place your gingerbread gravestones into the icing before it sets. You can then decorate as you like with jelly worms, white chocolate ghosts etc. Before the icing sets, quickly crumble your biscuit dirt over the top of the cake to make your graveyard soil and make a fence around the cake with chocolate finger biscuits, so ghosts and witches can’t escape.
