For Pancake Day Alex Hollywood has created Cottage cheese & blueberry pancakes which make lovely light and fluffy pancakes whether you want to have them for breakfast or after dinner!
Preparation time: 10 minutes
Cooking time: 15 minutes in batches
What You’ll Need:
- 2 eggs
- 175ml milk
- 2 tbsp caster sugar
- 150g cottage cheese
- 1 tsp vanilla extract
- 200g plain flour
- 50g rolled oats
- 2 tsp baking powder, (preferably a low sodium version)
- 150g blueberries
- Oil or butter to grease the pan
What To Do:
- Whisk together the eggs, milk, cottage cheese, sugar (or agave) and vanilla extract.
- In a separate large bowl place the flour, oats and baking powder. Mix well before stirring in the egg and milk mixture. Once combined, fold in the blueberries
- Melt a little butter in a non-stick frying pan.
- Drop spoonful of mix into the pan. You will get 3 or 4 pancakes per batch. When bubbles start to form on top, flip and cook on the other side for 2 minute then serve in stacks with summer berries, chopped bananas or maple syrup.
Top Tip: Get your kids to whisk up the batter, it might get a little messy but it’s great fun.
