Cottage cheese & blueberry pancakes

PancakesFor Pancake Day Alex Hollywood has created Cottage cheese & blueberry pancakes which make lovely light and fluffy pancakes whether you want to have them for breakfast or after dinner!

Preparation time: 10 minutes

Cooking time: 15 minutes in batches

What You’ll Need:

  • 2 eggs
  • 175ml milk
  • 2 tbsp caster sugar
  • 150g cottage cheese
  • 1 tsp vanilla extract
  • 200g plain flour 
  • 50g rolled oats
  • 2 tsp baking powder, (preferably a low sodium version)
  • 150g blueberries
  • Oil or butter to grease the pan

What To Do:

  • Whisk together the eggs, milk, cottage cheese, sugar (or agave) and vanilla extract.
  • In a separate large bowl place the flour, oats and baking powder.  Mix well before stirring in the egg and milk mixture. Once combined, fold in the blueberries
  • Melt a little butter in a non-stick frying pan.
  • Drop spoonful of mix into the pan.  You will get 3 or 4 pancakes per batch. When bubbles start to form on top, flip and cook on the other side for 2 minute then serve in stacks with summer berries, chopped bananas or maple syrup.

Top Tip: Get your kids to whisk up the batter, it might get a little messy but it’s great fun.

Serving suggestions: Summer berries and chopped banana or maple syrup to serve
